CONSULTATION FOR RESTAURANT SIDE OF BUSINESS.
ITEMS TO ADDRESS BEFORE PRE-OPENING: EXPOSED WOOD IN SEVERAL AREAS. PAINT ALL EXPOSED WOOD. THERE IS A GAP AROUND THE HVAC VENT IN THE KITCHEN. WORK WITH YOUR CONTRACTOR TO CLOSE THIS GAP. THERE IS ONE CFPM AND TWO MORE ARE SCHEDULED FOR CLASS ON 1-29-22. LEFT INFORMATION FOR ALLERGEN AWARENESS COURSE. ALL CFPM MUST COMPLETE ALLERGEN AWARENESS TRAINING. CONSTRUCTION IS STILL INCOMPLETE IN THE DRY STORAGE AREA. CURRENTLY ONLY LIQUOR, BEER, AND SODA IS STORED IN THIS AREA. COMPLETE CONSTRUCTION HERE BEFORE STORING ANY FOOD PRODUCTS. ALL HOLDING EQUIPMENT HAVE THERMOMETERS. CHLORINE BLEACH AND SANITIZER TEST STRIPS ARE PRESENT. BACKFLOW PREVENTION IS INSTALLED AT THE SERVICE SINK. ALL EQUIPMENT HAS BEEN DELIVERED AND DOCUMENTED. EXPOSED JOISTS HAVE BEEN COVERED WITH A FINISHED CEILING. CHEMICAL STORAGE IS AWAY FROM FOOD. BODILY FLUIDS KIT AND 1B FORMS ARE COMPLETE. THE ESTABLISHMENT MAY ORDER FOOD IN ANTICIPATION OF THE PRE-OPENING INSPECTION, SCHEDULED FOR 1-21-22. |
